3 TBSP chili powder 1/2 tsp salt
1/2 tsp cayenne powder 1/4 tsp cinnamon (optional)
1 tsp cumin 1 tsp garlic powder
1/2 tsp onion powder 1/4 tsp pepper
1/4 tsp oregano
2 tomato condensed soup
2 cups chicken/vegetable stock

 

Filling Ingredients:

12 small 7 inch tortillas
Enchilada sauce

Shredded chicken (2 skinless, boneless chicken breast halves)
Grated cheese

Garnish ingredients:

Large potato
Large carrot
Lettuce
Tomato

You will need:
For 4 people
2 cups of chicken breast, cooked and shredded
1/2 Onion filleted
1 cup Poblano pepper in slices
2 Zucchini in half moons
1 cup of Corn Kernels
2 tablespoons Oil
2 tablespoons Chopped parsley
FOR THE SAUCE
2 cups Tomato puree
1 clove Garlic
2 2 cups Cream
3 2 Chipotle peppers
4 250 gr mozzarella Cheese
5 1/2 kg Corn Tortilla
6 1 cup Oil
7 Salt to taste
8 Pepper to taste

2 cubes chicken bouillion
3 tbsp. fresh cilantro (chopped)
2 Garlic Cloves 1 1/2 tsp. ground black pepper

1/4 cup milk 1/4 cup water
